RAW FOOD DIET

After my trip to Chiang Mai I was excited by all the healthy food and I decided to try a Raw Food Diet.

They say that if 75% or more of your total food consumption is raw,  you are a raw foodist or living foodist. My Raw food diet contained:

  • Raw fruit
  • Raw vegetables
  • Nuts
  • Seeds

People living by the raw food diet believe that consumption of uncooked foods encourage weight loss, while also preventing and/or healing many forms of sickness and chronic diseases.

TRY A RAW FOOD JUICE !

BANANA SMOOTHIE

  • 1 banana
  • 1/2 cup oats
  • 1ts honey
  • 1/4 cup ice water

mix for a few seckonds in blender and top with chopped macademians.

BEETROOT AND APPLE JUICE

  • 1/2 cup of grated raw beetroot
  • 2 apples
  • juice of half a lime
  • 1/4 cup ice water
  • rhubarb sticks, chopped in fine slices.

Mix all the ingredients in the blender, accept from the rhubarb stick that you put in after.

APPLE AND KIWI JUICE

  • 2 apples
  • 2 kiwi’s
  • 1/4 cup ice water
  • 2 table spoons of maple syrup

Mix it all in the blender and top with slices of kiwi and sunflower seeds

RAW FOOD FOR A WEEK

My week of eating raw food was a bit up and down.

Monday I was low on energy, and Tuesday I was ready to give in. Tuesday night I was cheating a bit and I had a can of cooked tuna. This seemed to help on my energy level. Wednesday I felt better, and I didn’t crave the bread or my yogurt. But I ended up cheating this day as well: I had some tofu. Thursday I felt really fresh, light and I had lots of energy. Friday I kept going, and was thinking I could keep it up for longer. I ended my Raw Food Diet for a lovely dinner at Mat and Faustine’s on Friday night. I really enjoyed a hot meal after a week of cold food. My conclusion is that I’m going to try to eat more raw food in my everyday diet, but I can not be without warm food or any bread. But my skin felt better and at the end of the week I had restored my energy level. I spent a lot of time in the kitchen in the morning preparing my lunch for the day. I was eating every two hours, quite frequently since what you eat doesn’t last you long and you get hungry quickly again.

RAW BEETROOT AND ORANGE SALAD

  • 1 raw beetroot chopped
  • slices from one orange
  • juice of one lime
  • spinach and fresh basil
  • pinenuts and sesame seeds

Grate the beetroot, and slice the orange. Layer it on a bed of spinach and basil. sprinkle with lemon juice, and the nuts.

CUCUMBER AND AVOCADO SOUP

  • 1 cucumber
  • 1 avocado
  • juice of 1 lime
  • bunch of fresh basil
  • salt and pepper

Chop the cucumber, and add all the ingredients in the blender. Decorate with basil leaves, and grind some fresh pepper and sea salt on top.

Amsterdam

Amsterdam is the city of canals, small boutiqes and coffe shops on every corner.

You can easily get lost in all the small narrow streets, and there will always be something new to look at so you won’t get bored.

On a sunny weekend like we had I had the impression that everyone were coming from the farmers market on a bike with fresh flowers and big smiles.

There were no hurry at all and peolpe were always helpful showing directions.

Most of the time you feel like you are crossing the bridge you just crossed, but there are 400 bridges crossing the canals in Amsterdam. And they do look quite similar.

All the houses are narrow and tall in Amsterdam. Be preperad to climb a few steep stairs when you’re there. This originates from when the government decided to tax your house by the width and not the length.

The narrow houses makes moving furniture a bit of a challenge. That is why they all got really wide windows so that they can move everything in to the house from the outside through the window. So don’t be to surprised if you see a sofa hanging mid air from someones house.

DE JAREN is the place to be for breakfast.

You are sitting on an eyelevel with the captains of the boats passing by.

Students, tourist and the fashion pack are all gathered here.

There was a music festival on the river so boats were lining up for the best spot.

CAFE VAN LEEUVWEN

This is were we had our best lunch.

They serve amazing filled rolls with cold cuts and mustard, salads and soups.

It’s on the corner of Keizersgracht and Utrechtsestraat.

The shooping in Amsterdam is a delightful experience.

Lots of small more personal shops, that seems to be harder to find at the moment.

On Utrechtsestraat  you will find the store  American Apparel, among lots of small vintage shops.

When you are there you should also take stop at FOAM  on Keizersgracht 609.

FOAM is the well known Photography museum.

Eat deliciously

Apple and potato stew

  • 1,5 kg potatoes
  • 500g sour apples
  • 250g sweet apples
  • juice of one lemon.
  • 2 small onions
  • 250g smoked pork
  • 1 sliced apple

Boil the potatoes for about 20 min., then add the apples with juice of one lemon and boil for another 10 min.

Drain it and add a tablespoon of vinegar and stir it around gently.

Fry the onions and the pork, and top it on the potato stew.

Slice one apple and fry it lightly in the oil from the pork and onion and add it to the stew.

Season with salt and pepper.

It’s a fresh and not too heavy meal.

Vincent Van Gogh’s famous painting is called the “Aardappeleters”

Meaning the potato eaters.

It says it all!
