ORANGE WITH NUTTY YOGURT AND BLUEBERRIES

Serves 4

  • 2 oranges, peeled
  • 2 cinnamon sticks
  • 2 tbsp honey
  • 3 tbsp brown sugar

Slice the oranges in half, horizontally. Slice off the tops so both ends are flat. Simmer 2 cups of water in a small saucepan with the cinnamon sticks, honey and sugar. Add the oranges and gently simmer for 10 minutes.

Nut mix

  • a handful each of almonds, pecans and macadamia nuts, chopped
  • 2 tsp of mixed spices (cinnamon, ginger, and cloves)
  • 2 tsp of ground cinnamon
  • 1 tsp of butter

Fry the nuts in a pan with butter until golden.

Decoration

  • 1 tsp of blueberries for each serving
  • 2 tbsp greek yogurt for each serving

Place a slice of orange on each plate, then spoon 1 tsp of fresh blueberries on top of each slice. Put the Greek yoghurt on the side and scatter with the nut mixture.
