HAPPY VALENTINES DAY,  MOTHERS DAY AND CHINESE NEW YEAR!!

Lot of things on one day! And don’t worry for you guys who think you have missed Mothers Day. It’s only in Norway. Confusing when it’s different days, and I normally forget this day since I’m not at home to see all the reminders in the shop. But this year i haven’t and these scones are dedicated to you mum and all other mums!

These are a contribution from Johanna and Johanna.

The baker is Johanna Staxang, Johanna’s flatmate. A bit confusing with the names, but yes, they are both called Johanna. Photo is taken by Johanna Bohman.

Preheat oven to 260 Celsius

Makes 12 scones

  • 8dl flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 0/5 dl sugar

Mix all together and add

  • 125g cold butter
  • 2 eggs
  • 2dl milk
  • 100g dark chocolate, chopped

Beat one egg at the time with the milk. Add chocolate, and the dry ingredients into a dough.

  • 150g frozen raspberries

Carefully add the raspberries into the dough. Divide dough into 12 scones and brush them with 1 whipped egg and drizzle sugar at the top.

Bake in the oven for 10-15 min on 250 Celsius

Finally theses photos came back to me. Love shooting with film, but not many places develop film anymore, and specially not when it’s a positive film that needs cross processing. This one i sent to vision graphics in North Sydney. I wrote the address wrong so it took about a week and half to travel to one side of the city to the other. I thought I never would see the photos again, so was relieved when they finally got to the right place. The positive film which had an ISO on 200 came out with strong contrast, and clear colours.But a few came out to dark as well, be careful with shady places when using this type of film. I Used a Golden Half Camera.

Danish band, with vocalist Mette Lindberg and producer Lars Iversen. They released their first debut single ” The Sun Ain’t Shining No More” in September 2008. In 2009 MYER in Australia used one of their songs “golden age” to launch their 2009 summer clothes collection and it soon became a hit.

BALLOONS

What to do when the weather is crap and you need to get some fresh air and a break from the computer! Catch the balloons! I’ve had this idea for a while, it’s just so absurd with balloons out in the forrest that I thought it would be fun to try to capture it. Didn’t realise that they would pop so easily, the whole shoot was over in less then ten min when all the balloons were gone. Next time I will bring a few more!

Swedish indie pop

The swedes are extremely good to produce pop music, this is another one that i just discovered. She has been around for a while (2006), and  this single was released 2009. I sometimes forget to check the scandinavian music scene, but just discovered this website called Swedish Music For Dummies. It’s written by a passionate music nerd from Gothenburg, and she will hopefully keep me more updated in the future.

POMEGRANATE AND PISTACHIO CAKE

Moist and nutty!

Perfect cake for weekend afternoons

  • 75g whole meal flour
  • 75g plain flour
  • 160g semolina ( coarse)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 150g finely chopped pecans
  • 4 eggs
  • 220g caster sugar
  • 3tbs honey
  • 125g unsalted butter
  • 60 ml vegetable oil
  • 1 tsp vanilla extract
  • 300g Greek-style yogurt
  • finely grated zest of 2 lemons
  • juice of 3 lemons
  • 1 cinnamon quill
  • 6 cardamom pods, crushed
  • 1 pomegranate, seeds removed
  • 2 tbs chopped pistachio chopped

Preheat oven to 170 Celsius

Grease a 24cm spring form tin. Sift flour, semolina,baking powder, baking soda and 1/2 tsp salt into a bowl, then stir in chopped pecans. Whisk eggs and 110g sugar until pale and thick. Combine butter, oil and vanilla in a jug, then pour over flour mixture. Add yogurt and one-third of the egg mixture. stir gently and combine rest of the egg mixture. Spoon into the tin and bake for 50 min or until you can dip a pin in without getting it wet. Place on the lowest shelf covering the top with baking paper towards the end if it starts to take colour.

Meanwhile you can make the syrup for the cake. Place 110g sugar, 180 ml water, lemon zest and the juice of 2 lemons,  cinnamon and cardamom in a saucepan over medium heat, stirring until the sugar dissolves then simmer for 5 min. When the cake is out of the oven, use a skewer to prick the top of the cake. Gradually brush the cake with the syrup and leave the cake to cool. Discard the spices from the syrup and add 3 tbs of honey and juice of one lemon, stir for a few minutes, and add the pomegranate seeds and simmer until the syrup takes colour. Place the cake on a plate and then drizzle pomegranate syrup and pistachios over the top.

Serve with Greek yogurt

Love to walk in to these places were you can feel the passion and good atmosphere right away. There is so many of these places in Melbourne, and luckily Sydney is trying to catch up at the moment!

Grigons and Orr is the new corner shop. Now providing fresh milk every morning, pasteurised, chilled and packaged in glass bottles. You can also pick up your free range eggs from Annies farm here. In 1867 there was a corner shop her, that used to serve the neighbours with the daily bread and butter and now, 142 years after it’s back in the local community.

Try their couscous porridge with goji berries, or apple fritters with walnuts, caramel sauce and mascarpone dusted with mint sugar.

BEETROOT GAZPACHO

Latvian style, gazpacho.

Serves four or six as a starter

  • 800g of beetroot, canned and chopped
  • 1 small onion chopped
  • 1 garlic fed, chopped
  • 2tbs capers

Blend all in a blender and add:

  • 1/2 cup breadcrumbs ( stale bread, at least a day old)
  • 3 cups vegetable stock
  • 2tbs red wine vinegar
  • 1 cup Greek yogurt
  • 1 tbs brown sugar
  • salt and pepper
  • Blend again in the blender and chill for a few hours.

Serve with:

  • slivered pistachio nuts
  • 1 tsp Greek yogurt for each serve.
