FRENCH ONION SOUP

It’s just the right time for this kind of soup at the moment! And that’s if you find yourself in Sydney! If you are in Norway you will now be ready for the salads and the BBQS. Sorry, It’s a bit hard to get these seasons right. But I’m sure the soup will taste great even in spring time!
  • 50g butter
  • 750g brown onions, sliced
  • 1/3 cup plain flour
  • 1 bay leaf
  • 2 thyme springs
  • 2l beef stock
  • 1 cup white wine
  • croutons

Heat butter in a fry pan, saute onions till deep golden brown and starting to caramelise. Add flour and continuously stir for 1 minute. Gradually add beef stock and wine. Bring to the boil and add bay leaf and thyme, simmer for 25 min. Ladle into soup bowls, top with croutons and cheese and put under grill till brown.

    Love Onion Soup. Here’s a recipe for French-Canadian onion soup that my Canadian backpackers left me with a few years ago, really good. I’ll try Nicole’s fancier version this weekend to see how it compares!

    > 3 yellow onions
    > butter
    > flour
    > beef flavored cubes
    > water
    > small pieces of parmesan cheese!!!

    > 1st u cut the onion in small pieces (its more practical than the
    > original long sttripes of onions!)
    > than u put them in 3 tablespoon of butter in a pot, fire has to be
    > low (like levl2)
    > u COVER and stir a little until the onions r yellow and almost
    > translucid
    > add 3 mmore tablespoon of butter and stir till it melted
    > add 5tablespoon of flour (or more until the onions r all wrapped in
    > flour!) and stir
    > let the flour and butter get in the onions a little (wait like 1-2 mins)
    > add 1250 ml of water plus the number of cubes its says u need on the
    > box for 1250ml of water (u have to smash them with a spoon so they
    > dissolve better in the water!!) COVER
    > put the fire higher (like level 5) until it boils
    > then put to level 4
    > wait 30mins
    > while wiating, put the parmesan pieces in 4 bowls
    > taste the soup after 30mins and if its goo, serve on top of the cheese
    > if not, wait a little longer
    > SERVE and make sure to mention ur guests there is a surprise in the
    > bottom of theyre bowls!!!

Thanks, and for anyone that is having difficulty chopping onions without the crying, here’s an incredibly simple tip – put them in the fridge first, then chop them straight away after taking them out! No more tears! I found some more onion soup recipes here if anyone wants to try some more recipes.
