FRENCH ONION SOUP

It’s just the right time for this kind of soup at the moment! And that’s if you find yourself in Sydney! If you are in Norway you will now be ready for the salads and the BBQS. Sorry, It’s a bit hard to get these seasons right. But I’m sure the soup will taste great even in spring time!
  • 50g butter
  • 750g brown onions, sliced
  • 1/3 cup plain flour
  • 1 bay leaf
  • 2 thyme springs
  • 2l beef stock
  • 1 cup white wine
  • croutons

Heat butter in a fry pan, saute onions till deep golden brown and starting to caramelise. Add flour and continuously stir for 1 minute. Gradually add beef stock and wine. Bring to the boil and add bay leaf and thyme, simmer for 25 min. Ladle into soup bowls, top with croutons and cheese and put under grill till brown.

THE BUTTERCUP BARN

Sunday afternoon we left Sydney to hide away from the cyclone, computers and the city. Don’t think we managed to escape the weather, but with the curtains closed and the fireplace doing it’s magic that didn’t matter.

The “Buttercup Barn” is one of those cottages you don’t even wont to leave to go out for dinner. The cottage is constructed with 95% recycled material which gives this place a very special feel and a unique look.At the Leura Dairy Farm you can also stay in the Straw Bale House, The Studio, The Workers Cottage, The Milking Shed Or Moo Manor. All cottages got an unique style built from different recycled material. You are also surrounded by the World Heritage National Park, were there are plenty of different tracks you can do. The little village Leura also has a cute, small shopping street, with European style cafes, small boutique stores, and French style restaurants.
