Among the prettiest stationary, postcards and strings you can now find “Collected”. Yesterday I dropped of some of the last copies from the first print run of “Collected” to Margaret at Paper 2. Looks like there will be a second print run! Will keep you posted!

Pulp will be one of the first shops stocking my book “Collected”. Pulp is a lovely home ware shop, filled with small independent designer creations including books, antique furniture, kitchenware you didn’t know you needed, and cute things for creating an atmosphere for your home! “COLLECTED” BOOK LAUNCH

Paper bags and strings are ready to wrap the book ‘collected’. The book is being launched in the city at Glow Salon on Friday. I will also be at the Manly market with the book on Saturday, so come and have a look! And thanks to all of you who has bought the book online! A copy will be in your mailbox shortly.

Finally! About a year ago I had a pile of handwritten recipes from all corners of the world, mostly from friends and family. Recipes I thought deserved a better way of being stored and looked after. Now it’s a book containing 40 of my friends’ (and my own) favorites dishes. They are all easy recipes with some interesting twists. Most of them are as healthy as they are simple, and work well for busy bees who don’t like spending half a day in the kitchen.

You can pre-order the book from www.collected.no if you’re keen on your own copy. There are only 200 copies available, so hurry up If you want one. The book is printed on recycled paper using vegetable-based ink.

BEETROOT GAZPACHO

Latvian style, gazpacho.

Serves four or six as a starter

  • 800g of beetroot, canned and chopped
  • 1 small onion chopped
  • 1 garlic fed, chopped
  • 2tbs capers

Blend all in a blender and add:

  • 1/2 cup breadcrumbs ( stale bread, at least a day old)
  • 3 cups vegetable stock
  • 2tbs red wine vinegar
  • 1 cup Greek yogurt
  • 1 tbs brown sugar
  • salt and pepper
  • Blend again in the blender and chill for a few hours.

Serve with:

  • slivered pistachio nuts
  • 1 tsp Greek yogurt for each serve.

JOHANNA’S HARDLY BAKED “KLADDKAKA”

Since Johanna left Sweden she has been trying to find the prefect “kladdkaka”, a swedish chocolate cake. She has been unsuccessful and the solution was to bake it herself, and I’m lucky enough to be able to share the recipe here with you.

  • 100g butter
  • 4tbsp cocoa
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup flour

Melt the butter and add cocoa. Stir until smooth. Add the sugar, eggs and flour, stir until the mixture is even. Pour the mixture into 9 baking cups and bake in the middle of the oven on 200oC for about 11 minutes. The middle of the cake should still be creamy. Let the cakes cool, then put them in the freezer. Take them out about 10 minutes before serving. This way the cake is still creamy but stays together.

Serve with kiwi, berries and ice cream. Yummy!
