KIKUTBOLLER I NORDMARKA

Monday, August 9th, 2010

On one of the first days back in Oslo we biked up to “Kikut” (Lookout) in Nordmarka. This place is just outside the city center but it feels like you are miles away! It’s green and lush, and when we finally reached the destination after a few steep hills we felt we deserved a treat! And that’s when I got to try the “Kikutbolle”. They taste best after a good work out!

  • 1 sachet dry yeast or 1 pack fresh yeast.
  • 2 1/2 cup milk
  • 200g butter
  • 4-5 cups flour
  • 3/4 cup sugar
  • 2 tsp cardamom
  • 1 tsp vanilla sugar
  • 2 tsp baking powder

1/2 cup vanilla cream for filling.

Mix coconut, icing sugar, and a bit water until it is thick and easy to spread on the rolls.  (Prepare when the buns are in the oven)

Preheat oven to 225 degrees.

Add yeast to a bowl or a kitchen aid. Melt butter and add milk. when liquid is 37 degrees, combine with the yeast and stir well. Mix all dry ingredients and add gently while stirring. Knead well, the dough should be quite moist to work with. Let it rise to double size (at least for an hour). Divide the dough into 24 parts and roll them gently until they are smooth and round. Make a hole in each bun with a spoon and add 1-2 tsp vanilla cream. Put on a tray and let the rolls rise again for about 30 min. Brush them with a whipped egg and bake them for 12 min. Let cool on a wire rack, add icing around vanilla cream and serve while still a bit warm!

SOMEWHERE ALONG THE COAST

Thursday, July 22nd, 2010

Just across the border from Norway in Sweden is this small town Strømstad. Norwegians seek here to buy cheep alcohol and meat. When we crossed the border I was not expecting anything idyllic. The only time we hear about this town is in context of getting a bargain for us coming from an expensive place like Norway. To my surprise Strømstad is actually a cute small harbor city. We picked up freshly peeled prawn sandwiches and had a picnic along the water. We left a few hours after with wine, beer and sodas! Not sure how much we saved on it, but now we have been to Strømstad.

A ROOM WITH A VIEW

Monday, July 19th, 2010

In Harads, Sweden the “Treehotel” is about to open. The project was conceived by tree hotel co-founder Kent Lindvall and he came up with the concept with his wife Brita. These cabins brings back childhood memories from all the cabins we used to make in the woods. Ours never looked like this, but I guess the feeling of climbing the ladder up to your room would bring you back to those moments.

The “mirrorcube” designed by Tham & Videgard architects. Everything will reflect in this mirrored glass, and it will almost be invisible in the forest.

The glass could be a worry for the birds, but the architects have thought about this and have applied a film to the glass which will be visible to them.

MY CHILL OUT PLACE

Saturday, July 17th, 2010

Hello again!

After leaving Sydney, we escaped the busy times packing and moving by traveling to a place were life is simple and sweet. We did yoga, detoxed, changed the diet to raw food and learned to cook curry the right way.

The afternoon break outside Mc Donald’s

I loved the gasoline bottles! Two of these were enough for the scooter for a whole day adventure, each bottle cost less then $1.50.

There is plenty of chill out time for the locals.

I´m already back in Oslo now, and the organizing for our next home have started. I´m already inspired by the fashion, design and the nature here. My camera is with me everywhere at the moment! You will soon see!
