KIKUTBOLLER I NORDMARKA

On one of the first days back in Oslo we biked up to “Kikut” (Lookout) in Nordmarka. This place is just outside the city center but it feels like you are miles away! It’s green and lush, and when we finally reached the destination after a few steep hills we felt we deserved a treat! And that’s when I got to try the “Kikutbolle”. They taste best after a good work out!

  • 1 sachet dry yeast or 1 pack fresh yeast.
  • 2 1/2 cup milk
  • 200g butter
  • 4-5 cups flour
  • 3/4 cup sugar
  • 2 tsp cardamom
  • 1 tsp vanilla sugar
  • 2 tsp baking powder

1/2 cup vanilla cream for filling.

Mix coconut, icing sugar, and a bit water until it is thick and easy to spread on the rolls.  (Prepare when the buns are in the oven)

Preheat oven to 225 degrees.

Add yeast to a bowl or a kitchen aid. Melt butter and add milk. when liquid is 37 degrees, combine with the yeast and stir well. Mix all dry ingredients and add gently while stirring. Knead well, the dough should be quite moist to work with. Let it rise to double size (at least for an hour). Divide the dough into 24 parts and roll them gently until they are smooth and round. Make a hole in each bun with a spoon and add 1-2 tsp vanilla cream. Put on a tray and let the rolls rise again for about 30 min. Brush them with a whipped egg and bake them for 12 min. Let cool on a wire rack, add icing around vanilla cream and serve while still a bit warm!

Outside of Manly, this is my favourite place in Sydney! Love the village feeling, with small boutique shops, cafes and restaurants.

These photos are taken with my Golden Half camera on 35mm film. I picked up this film from the photo lab the other day, surprised to find all my photos as singles, not double like they are supposed to be. The kind lady behind the desk explained that she had spent a lot of time in Photoshop separating the photos from each other and that she had to charge me the double for the extra work. So now it’s not really Golden Halfs anymore, but they still look good. Next time I will have to be a bit more specific when i hand them in.


HUNTER VALLEY

Early morning run in Hunter Valley. I  love waking up at a new place, put runners on and go out to explore what’s around and plan the rest of the day.F1000008

After a hearty breakfast at Elfin Hill, the place we spent the night, we picked three wineries to visit: Audrey wilkinson, Tullock and scarborough. All three were good, but nothing could beat the stunning view from Audrey Wilkinson vineyard. After all the wine we were longing after a fresh home made gelato from The smelly Cheese Shop. They use what’s in season and are changing their flavours regularly. I had honey and macadamia nuts. A perfect ending on a good day.

IMG_3052We found home made preserves in a small little shop in Bilpin, along the long, but beautiful drive from Blue Mountains to Hunter Valley. After a few hours in the car it was refreshing with their homemade Bilpin apple juice.

Finally theses photos came back to me. Love shooting with film, but not many places develop film anymore, and specially not when it’s a positive film that needs cross processing. This one i sent to vision graphics in North Sydney. I wrote the address wrong so it took about a week and half to travel to one side of the city to the other. I thought I never would see the photos again, so was relieved when they finally got to the right place. The positive film which had an ISO on 200 came out with strong contrast, and clear colours.But a few came out to dark as well, be careful with shady places when using this type of film. I Used a Golden Half Camera.

Noosa, up-market beach town on the east coast. Located 160 km north of Brisbane and 1100 km north of Sydney. Australians would say it’s their version of Cannes in France. You got Peter Lik and Hugo Boss on the beach and award winning restaurants and coffee bars on every corner.

Noosa National park is also worth having a look at. There is five different tracks you can do , ranging from one kilometre to eight kilometres.

250 000 holiday makers are planning their holiday in Noosa every year. Make sure you book accommodation ahead in peak times like around christmas and school holidays, it will be busy. We tried out two backpackers in Noosa. One of them was YHA Halse lodge. Located close to Hasting street and main beach it is the perfect spot. The house is a fully restored house from the 1880’s, listed by the national trust. The prices starts on $30 and they do twin and double rooms. www.halselodge.com.au

Other Backpacker place, which  is also good, but a bit further away from Noosa heads is Noosa backpackers, Located in Noosaville it will take ten min with the ferry on the river, or 5 min bus ride in to main beach.www.noosabackpackers.com.

Try stand up paddle www.standuppaddle.com.au while you are in Noosa. Great fun, and a good way to have a look at the million dollar mansions placed right on the river.
